Nam phrik phao
Nam phrik phao (Thai: น้ำพริกเผา) is a type of Thai spicy chili sauce known as nam phrik, one of the chilli pastes used in Thai cuisine. It contains chilli peppers, shallots, garlic, fermented shrimp, tamarind, fish sauce and palm sugar.

Chili peppers are nam prik pao's primary component. The paste contains a variety of chili peppers, including dried red chili, Thai chili, and bird's eye chili. Nam prik pao is a preferred condiment for those who like spicy meals because these chilies are renowned for their heat and spiciness. Chilies and other ingredients combine to produce a flavor that is both fiery and sweet that is layered and rich.[1]
Dried shrimp is another essential component of nam prik pao. This component gives the paste a salty, faintly fishy flavor. For their taste depth and aromatic qualities, shallots and garlic are also added. For sweetness and to counteract the heat of the chili peppers, palm sugar is added. The paste gains a savory and umami flavor through the use of fish sauce, a typical component in Thai cooking.
