Sheftalia
Sheftalia (locally [ʃeftaˈʎa]; Greek: σεφταλιά) is a traditional sausage from Cyprus made from caul fat, or omentum, the membrane that surrounds the stomach of pig or lamb, to wrap the ingredients rather than sausage casing.[1][2][3]
