Yields 6 to 8 servings

Ingredients

  • 1/2 cup dried porcini mushrooms
  • 1 tablespoon olive oil
  • 2 cups chopped onions
  • 8 ounces sliced cremini or button mushrooms
  • 2 cloves garlic, minced
  • 1/4 teaspoon dried thyme
  • 1/4 cup all-purpose flour
  • 4 cups vegetable broth
  • 1/2 cup whipping cream
  • 1/3 cup marsala wine (optional)
  • Salt and black pepper, to taste

    Cover the dried porcini mushrooms with boiling water in a small bowl. Leave it on the side for at least 15 minutes. This will allow the mushrooms to become tender and soft.

    Place a large saucepan over a medium heat with the oil.

    Cook the onions until translucent, for about 5 minutes.

    Add the garlic, cremini mushrooms, and thyme. Stir and cook for an additional 8 minutes.

    Add the flour and stir for a minute. Carefully pour the broth in and stir.

    Drain the porcini mushrooms, but reserve the liquid. Chop the mushrooms and add it, with the liquid, in the saucepan.

    Bring the mixture to a boil, reduce to a medium-low heat, and simmer for 10 minutes.

    Add in the whipping cream, marsala wine, salt, and pepper. Continue simmering for another 5 minutes.
