Rose butter is a sweetened butter that can be put out for afternoon tea with cakes, biscuits (cookies) and other sweet treats.

Ingredients

  • 115g (4 oz) unsalted butter, room temperature or softened
  • 1 teaspoon caster (superfine) sugar
  • 1 teaspoon almond essence (extract)
  • 2 tablespoons of chopped rose petals (see "Steps" for advice)

Steps

  1. 1
Choose the rose petals. The best rose petals for this recipe are those that are highly scented. The old-fashioned rose types such as rugosa, musk, damask or Eglantine roses are good choices.
    • Be sure to choose rose petals that have not been sprayed with chemicals. They must be organic petals.
    • Wash and allow to dry thoroughly before using in this recipe.
  2. 2
Remove the petals from the flower head.

  3. 3
Place the butter in the mixing bowl. Add the petals.
  4. 4
Whisk the butter and petals together. Mix until combined.
  5. 5
Form balls using two wooden spoons. Roll back and forth on the spoon head until a ball shape forms.
  6. 6
Place on a small dish covered in wax or baking (parchment) paper. Place the dish inside the airtight container and seal.
  7. 7
Place the rose butter balls into the refrigerator to set. They're ready to serve once they've firmed up.
