Rose butter is a sweetened butter that can be put out for afternoon tea with cakes, biscuits (cookies) and other sweet treats.
Ingredients
- 115g (4 oz) unsalted butter, room temperature or softened
- 1 teaspoon caster (superfine) sugar
- 1 teaspoon almond essence (extract)
- 2 tablespoons of chopped rose petals (see "Steps" for advice)

1Choose the rose petals. The best rose petals for this recipe are those that are highly scented. The old-fashioned rose types such as rugosa, musk, damask or Eglantine roses are good choices.
- Be sure to choose rose petals that have not been sprayed with chemicals. They must be organic petals.
- Wash and allow to dry thoroughly before using in this recipe.

3Place the butter in the mixing bowl. Add the petals.

4Whisk the butter and petals together. Mix until combined.

5Form balls using two wooden spoons. Roll back and forth on the spoon head until a ball shape forms.

6Place on a small dish covered in wax or baking (parchment) paper. Place the dish inside the airtight container and seal.

7Place the rose butter balls into the refrigerator to set. They're ready to serve once they've firmed up.
