Oyster omelet is a traditional culinary delight and is ranked in the top 10 most favored dishes in Taiwanese. If you’ve tried it, you would know how savory it is! With this simple recipe, you can enjoy it at home, too!
Ingredients
Sweet Chilli Bean Sauce
- 6 teaspoons ketchup
- 1 tablespoon granulated sugar
- 1 tablespoon soy sauce or condensed soy sauce
- 2 tablespoons miso sauce
- 1/4 cup rice wine vinegar
- 120-150 ml water
- 2 teaspoons cornstarch
- 1/2 cup cold water
- 2 tablespoons (about 12) raw oysters
- 2 eggs
- Handful of bok choy or water spinach
- 2 teaspoons sweet potato starch (about 35 g)
- 1/4 cup water (about 130-140 ml)
- 1/2 teaspoon table salt or kosher salt
- 2 teaspoons grapeseed oil

Make the Sweet Chili Bean Sauce

1Stir the ketchup, granulated sugar, soy sauce, miso sauce, rice wine vinegar, and 120-150 ml water together in a saucier.

2Simmer and stir constantly until it dissolves. Taste and adjust the seasoning.Advertisement

3Add the cornstarch and 1/2 cup cold water to the saucier. Simmer until it is boiling and thickened.

4Remove it from the heat and set it aside.

Make the Oyster Omelet

1Scrub bok choy under cold running water and chop it.

2Shuck oysters and gently rinse under cold running water.

3Mix the sweet potato starch, 1/4 cup water, and salt until well-combined and set aside for 20-30 minutes. Setting aside will give a better starch mixture.

4Put the grapeseed oil into a cold frying pan over medium-high heat, add the oysters and wait till half-cooked.

5Stir the starch mixture, add 3-4 tablespoons and pan-fry until the mixture becomes translucent and the edge is crispy.

6Break eggs into the pan and add bok choy. While cooking until the eggs are set and the greens wilt a little, carefully flip the omelet with two spatulas or hold the handle and saute it back and forth.

7Turn off the heat when the omelet is cooked, and place it on a plate with a lot of sweet chili bean sauce topping.
