This is a recipe from The Peninsula hotel in Kowloon, Hong Kong. Tamarind dressing goes well in Asian style salads, including warm salads.
Ingredients
- 3 tbsp tamarind pulp
- 1 large orange, grated rind and juiced
- 1/2 cup olive oil
- 2 tbsp of verjuice or cider vinegar
- 2 tbsp mirin (optional)
- 1 tsp prepared mustard
- 1 tsp sugar
Steps

1Soak the tamarind pulp in 1/2 cup warm water. Leave it to soak for about 10 minutes until it softens.

2Squeeze the soaked pulp to make a pulped mixture.Advertisement

3Strain it to remove the seeds and fibre.

4Stir the smooth pulp together with the orange juice, orange rind, verjuice or vinegar, mirin (if using), mustard and sugar.

5Mix together well.

6Add to salad or provide separately for diners to add to their salad as wished.
