This is a recipe from The Peninsula hotel in Kowloon, Hong Kong. Tamarind dressing goes well in Asian style salads, including warm salads.

Ingredients

  • 3 tbsp tamarind pulp
  • 1 large orange, grated rind and juiced
  • 1/2 cup olive oil
  • 2 tbsp of verjuice or cider vinegar
  • 2 tbsp mirin (optional)
  • 1 tsp prepared mustard
  • 1 tsp sugar

Steps

    Soak the tamarind pulp in 1/2 cup warm water. Leave it to soak for about 10 minutes until it softens.

    Squeeze the soaked pulp to make a pulped mixture.

    Strain it to remove the seeds and fibre.

    Stir the smooth pulp together with the orange juice, orange rind, verjuice or vinegar, mirin (if using), mustard and sugar.
