Some people believe that oatmeal chocolate chip muffins are one of the healthiest and greatest desserts available after a long day. As a college student having no time to make healthy snacks and relies on eating chips from the convenience store, this recipe will be the perfect solution to going about the day feeling much healthier and motivated. These great muffins will allow for an explosion of flavor with only one bite. This recipe will make approximately 2 dozen muffins.

Ingredients

  • ½ cup oats
  • 2.5 cups milk
  • 3/2 cup packed brown sugar, divided
  • 3/2 cup semisweet chocolate chips
  • 1 cup vegetable oil
  • 2 eggs
  • 1 teaspoon butter
  • 2.5 cups all-purpose flour
  • 8 teaspoons baking powder
  • 2 teaspoon salt

Steps

  1. 1
Preheat the oven to 205 degrees C (400 degrees F).
    • Listen for when the oven is ready to be used to avoid miscooking.
  2. 2
Put oats and milk in a medium-sized bowl.
    • Mix two ingredients and this will allow better absorption of milk from the oats. Absorption of milk will result in better cooking when in the oven.

  3. 3
Allow the mixture to sit on the counter for 10 minutes.
    • Allow for a longer time if the mixture is not fully absorbed.
  4. 4
Line your muffin tin with cooking spray or butter.
    • Muffin liners may be used as an alternative and will be easier to remove muffins from the tin if used.
  5. 5
Combine brown sugar, vegetable oil, chocolate chips, and eggs in a large bowl.
    • Do not eat raw batter due to egg and may result in salmonella.
  6. 6
Combine your wet ingredients with the oats and milk mixture.
    • Whisk all together and make sure to reach all edges.
  7. 7
Put dry ingredients in a bowl and mix.
    • Sift the flour, salt and baking powder into a bowl and whisk them together.
  8. 8
    Mix dry ingredients together.
    • Mix well with a whisk or fork.
  9. 9
Add the oat mixture to the dry ingredients.
  10. 10
Stir well until you have a wet consistency.
    • Mix for at least five minutes to allow for all dry ingredients to be absorbed and ready to be put in oven.
  11. 11
Fill each prepared muffin tray two-thirds full of batter.
    • Fill only 2/3 or less since in oven muffins will rise and will cause a mess around tin tray if overfilled.
  12. 12
Bake in the oven for 25 minutes, or until golden brown.
    • Cooking time will vary depending on oven strength and preference of muffin texture.
