Flying Jacob

Flying Jacob (Swedish: flygande Jacob/Jakob pronounced [flyːˈgandɛ jɑːˈkɔp])[1] is a Swedish casserole composed of chicken, cream, chilli sauce, bananas, roasted peanuts and bacon.[2] The dish is baked in an oven and is usually served with rice and a salad.

The dish was invented by Ove Jacobsson who worked in the air freight industry, hence the name. The story goes something like this. In 1976 in the suburbs of Stockholm it was chiq to have neighborhood potlucks. Ove was asked to cook the main course dish one evening. He looked around the kitchen and only saw peanuts and bananas. He then checked the fridge. He had some cream, bacon and some leftover chicken from the night before. The Swedes had already perfected recipes where you whip heavy cream so that was done. He also added imported Heinz Chili Sauce. He mixed it all up and cooked it for the potluck. It was a huge hit at the party. Reportedly his neighbor, Anders Tunberg, worked for Allt om Mat (All about Food) magazine they published it in Allt om Mat.[3][4] The recipe was first published in Swedish cooking magazine Allt om mat in 1976.[2][5]
